When you go to Cagayan, you should taste their famous pancits. I say pancits because there are two kinds of it in the province.
Pancit Tuguegarao a.k.a. Batil Patong
First is the Pancit Tuguegarao, a.k.a. Batil Patong. The toppings is composed of pork meat and (lots of) pork liver, which makes the dish so tasteful that you can forget your name after some spoonful of it, cabbage cut into little strips and some togue (monggo sprouts). A sunny side-up egg is also put on top to make it even more delicious.
Pancit Cabagan
The second one is the Pancit Cabagan, a kind of stir-fried noodles which actually originated from Cabagan, Isabela. It is also topped with cabbage and eggs (this time, it's itlog ng pugo or quail eggs), and crunchy lechon carajay. The only difference from Batil Patong is that Pancit Cabagan is more saucy and soupy (as shown in the pictures).
The noodles used for both pancits are freshly made up of egg and flour. Cagayeños make their own noodles, maybe that what makes their specialty unique. And these pancits would never be complete without spicing it up with a kind of sauce that you have to mix depending on your preference. You will be provided with a bowl full of chopped white onions, soy sauce, vinegar with green and red siling labuyo, and calamansi. Put them together and mix with the pancit. Tip: The more you put into the noodles, the yummier. Hmmmn... I can still imagine how Batil Patong and Pancit Cabagan taste.

I was in Cauayan City, Isabela for the last two days (Friday and Saturday). I happened to try the two pancits from one of the small resto along the highway. Their ingredients and preparations were basically the same. Pancit Cabagan has boiled quail eggs a chopped onions; while Batil Patong has fried chicken egg and some sauce. The taste's fine with me.

it here as good as we do in isabela.. Our pancit cabagan is really delicious... Yummmmm
Nakaka-miss mangan ti Pancit Cabagan! I used to eat a lot of that when I was in Tuguegarao and gain... quite a number of pounds because of that... but I don't care. It's delicious!
